The Wine

Harmony Revealed: Dom Pérignon is Vintage only

In the darkness of the cellars, inside the bottles, each Vintage goes through a slow transformation in contact with the yeast. It takes no fewer than eight years of elaboration to reach a harmonious dialogue between the character of the year and the signature of Dom Pérignon. The champagne showcases a perfect equilibrium, and all the elements are present with great relevance, revealing the harmony. It is a promise, an invitation to enter the world of Dom Pérignon.

Commitment to vintage: One year, one creation. At Dom Pérignon, each vintage expresses the uniqueness of a single year. But not every year brings forth a vintage. Crafting a Vintage is an act of Creation. Not declaring one is an act of Commitment. Creation has its own rhythm. Some years offer Vintages. Others remain silent, so they can elevate the ones that follow.

    Vintage 2015:

Born of a year of exceptional contrasts, Dom Pérignon Vintage 2015 stands out with its soothing strength and striking tactile presence during tasting. All our champagnes contain sulphites.

The 2015 winegrowing year was marked by striking contrasts in climate, starting with a particularly cold spring, followed by a prolonged period of hot, dry weather that lasted until the end of August. When the harvest began on 7 September, in brilliant sunshine, the vines were impeccably healthy, revealing the exceptional generosity and balance of the grapes. This vintage aromatic wine promises a remarkable aromatic richness, capturing the unique essence of the year.

The emotion elicited by Dom Pérignon Vintage 2015 oscillates between stimulating and calming. The subtle bitterness acts as a stimulant that captures the attention, while the wine’s generosity unfurls a long vibration and structured texture with a soothing effect, gradually opening out towards the horizon. This vintage is a perfect example of Dom Pérignon’s ability to capture and enhance the essence of the ingredients with which it is served, promising a memorable tasting with an inspiring intensity and finesse.

    Tasting notes

Nose & palate: Dark and tactile.

Dom Pérignon Vintage 2015 stands out for its complex aromatic flavor profile combining intense roasted and cocoa notes, balanced by delicate floral aromas of lime blossom, jasmine and peony. Elevated by a bouquet of spices such as aniseed and cardamom, Dom Pérignon 2015 also offers a fruity, botanical freshness, with subtle hints of orange and green papaya. This blend of flavours creates the perfect taste harmony for lovers of fine wine. The 2015 vintage wine is characterised by its breadth and delicacy, offering a unique sensory experience. Notes of peach, nectarine, citrus and gentian create a harmonious blend, giving the wine a rich texture and a diverse aromatic palate. This rich, well-balanced cuvée captures the essence of the exceptional terroirs from which it comes, promising a memorable wine tasting experience.

This vivid display is enriched by notes of canele pastry, chopped almond, pastry cream, smoke and vanilla, all coming to the forefront through the midpalate and chiming on the lasting finish.
