Dominio de Pingus PSI, 750ml, Ribera del Duero, Spain
The Wine
PSI is a “neo-cooperative” venture between the partners, and many of the best independent grape growers in Ribera del Duero. A critical element of the PSI project is Peter Sisseck’s desire to preserve the region’s clonal heritage in its old, head pruned vineyards. To that end, Peter Sisseck and Pablo Rubio (Winemaker) have worked with the growers to identify their best parcels, and to promote healthier, more natural viticulture.
Tasting notes
Riberas is crafted to age, developing complexity over time, yet balancing acidity and generous fruit, they’re unequivocally food-friendly wines to drink young. The spices, dark fruit and smoky flavors of Ribera enhance anything off the grill, roasted meats, and rich kinds of pasta.
