The Wine
In ‘91 Michele planted the first vineyard with Merlot, Cabernet Sauvignon, Sangiovese and Syrah, with the aim of indulging both the established great expression of Bordeaux grape varieties in Bolgheri, both the all-Tuscan elegance of Sangiovese and the all-Mediterranean complexity of Syrah. It is the first wine in the territory to use the Bolgheri Rosso designation. From 2012 it becomes Bolgheri Rosso Superiore, as the vines have now reached sufficient age to express all their complexity. Syrah was phased out of the blend with the 2019 vintage, followed by
Sangiovese from the 2023 harvest.
Today, Piastraia is a refined expression of harmony between Cabernet Sauvignon, Cabernet Franc and Merlot.
Vinification
Each variety fermented separately in truncated conical cement casks of 30 hl. The yeasts are exclusively spontaneous. Extraction during the peak of fermentation varies according to the potential of the grapes, as does the post-fermentation maceration, which can last up to 20–25 days. Malolactic fermentation takes place in wood and cement. After two to three days of open pump-over, only one pump-over per day is carried out closed. With frequent tastings, the moment of racking is carefully chosen (usually after about 20 days), after which the wine goes directly into barriques to carry out malolactic fermentation.
Fining
Maturation in French barriques with 40% new wood for a time between 12 and 18 months.
