Michele Satta Bolgheri Rosso DOC, 750ml, Tuscany, Italy
The Wine
This is the estate's expression of all the young vineyards with the freshest and lightest production. A wine that is a representation of how Bolgheri knows how to produce wines of great drinkability and satisfying complexity. The maturations are never excessive as are the extractions. Right from the vineyard management, the aim is to produce a wine that is representative of Bolgheri's joy
Vinification
Fermentation takes place in steel and cement tanks using spontaneous yeasts. Initially, two pumpovers per day are carried out, which are later thinned out depending on how the extraction proceeds. The same applies to the maceration time, estimated on the basis of frequent tastings. After malolactic fermentation, which naturally take place in November, the various vinifications are assembled and go into maturation
Fining
12 months, part in cement casks (30 hl), part in barriques of second and third passage
Longevity
10 years.
