Vinification
Sequential pressing of whole grapes, fermentation in steel tanks and maceration for 4 months in lees. Second fermentation using the Martinotti (Charmat) method.
Tasting notes
Yellow straw color with some green reflections, the wine presents a consistent mousse and fine perlage.
Rich bouquet of flowers specially Wisteria and Acacia and some notes of green apples. Fresh and elegant, armonius and flavourful on the palate, caractherized by a balanced acidity and sapidity.

Food Pairing:
This wine it's a perfect aperitif but also a wine for every dish of your meal. It pairs well with crustaceans and seafood, but specially with raw fish like sushi or oysters, mushrooms (tartufi) or langoustines. Also goes well with light plates based on white meats or fish.
